Marinated Chicken and Peppers

Hi everyone, so today I’m going to give you a recipe for a quick easy and delicious supper. I’m going to give a little short cut as to what I use to marinate my chicken. Try it out and let me know what you think.

1 or 2 boneless chicken breasts, cut into stripes

1/2 cup of Olive Garden’s Italian dressing

1/4 tsp of dry basil

1/4 tsp of dry parsley

1/4 tsp of pepper

1/4 tsp of herb de Provence

2 Tbsp of olive oil

2 red and orange bell peppers cut into strips (you can use what color you prefer)

4 slices of yellow onion or red what you prefer.

1 clove of garlic chopped fine

After cutting the chicken into strips place it in a glass bowl and pour the dressing over the chicken, making sure it is completely coated. Cover with plastic wrap and place in the fridge for about an hour.

Heat 1 tbsp of olive oil in a skillet, add your chicken and brown.

Remove chicken to a plate and add all other ingredients, cook until just tender. (don’t overcook them you don’t want them to be soft)

Add chicken back in with the peppers, onions and stir together. This can be served on your favorite rice, I like Basmati or Jasmine.

Sit back and enjoy! Quick and easy, you can marinate your chicken the night before, so it is even quicker to make.
