Let’s Eat!
Ok ladies let’s have some turkey meatballs, yum!
Here is the recipe,
1 pound of ground turkey
1 tbsp chopped fresh italian parsley
1/4 cup Italian bread crumbs (or you can use regular, these just add more flavor)
1/4 tsp dry basil
1/4 tsp italian seasoning
1/4 tsp garlic powder
1/4 tsp ground black pepper
1/4 ts sea salt or Kosher salt
1/4 cup chopped spinach, I know you are probably thinking Spinach! Try it if you like spinach it is really good in these meatballs.
1/4 cup finely grated parmesan cheese.
1 egg
1 tbsp ketchup
Mix everything together in a mixing bowl, for meat into 1” or 2” balls or to the size you would like. I use a 2” scoop. Heat 2 tbsps of olive oil in a skillet, add the meatballs to brown on all side. You might have to brown in 2 batches, I know I do. You don’t need to cook through as they will finish cooking in the oven. Preheat oven to 350 degrees. Once meatballs are brown place into a baking dish, then make sauce below.
Sauce,
3/4 cups ketchup
2 tbsps vinegar
7 tbsps brown sugar
2 tbsps of soy sauce ( you can use low sodium if you want, I do)
Bring to boil on the stove until the sugar has melted, at least 4-5 minutes.
Pour sauce over the meatballs, put into oven to bake about 30-40 minutes. During the final cooking process I will stir the meatballs around in the sauce. If you like you can add a mozzarella pearls to middle before n them. This is makes them even more amazing.
